Quinoa-Chicken Toss

Ingredients
- 1 cup quinoa
- 1½ lemons
- ½ cup refrigerated Champagne vinaigrette
- ½ tsp salt
- 2 (5-oz) pkg baby kale
- 3 cups shredded rotisserie chicken
- ½ cup freshly grated Parmesan cheese
- ½ cup roasted, salted pistachios, coarsely chopped
- ½ cup chopped red onion
Instructions
- Cook quinoa according to package directions.
- Meanwhile, grate zest and squeeze juice from lemons to measure 1 tsp zest and 3 Tbsp juice. Whisk together zest, lemon juice, vinaigrette, and salt in a large bowl.
- Add kale, chicken, cheese, pistachios, onion, and quinoa; toss.
