Quinoa-Chicken Toss

Ingredients

  • 1 cup quinoa
  • 1½ lemons
  • ½ cup refrigerated Champagne vinaigrette
  • ½ tsp salt
  • 2 (5-oz) pkg baby kale
  • 3 cups shredded rotisserie chicken
  • ½ cup freshly grated Parmesan cheese
  • ½ cup roasted, salted pistachios, coarsely chopped
  • ½ cup chopped red onion

Instructions

  1. Cook quinoa according to package directions.
  2. Meanwhile, grate zest and squeeze juice from lemons to measure 1 tsp zest and 3 Tbsp juice. Whisk together zest, lemon juice, vinaigrette, and salt in a large bowl.
  3. Add kale, chicken, cheese, pistachios, onion, and quinoa; toss.
