Pineapple-Glazed Salmon

Ingredients

  • 2 (6-oz) salmon fillets (or other firm fish)
  • ¼ tsp kosher salt
  • 2 Tbsp pineapple preserves
  • 2 tsp fresh lemon juice
  • 1½ tsp olive oil
  • ⅛ tsp cayenne pepper
  • ½ tsp soy sauce
  • 1 clove garlic, minced
  • 1 green onion, chopped

Instructions

  1. Preheat broiler. Place fish on a foil-lined baking sheet; sprinkle with salt.
  2. Process preserves, lemon juice, oil, cayenne pepper, soy sauce, and garlic in a food processor until smooth. Brush over fish. Broil 8 minutes or to desired doneness. Sprinkle with green onions.

  • ½ cup couscous
  • 2 tsp chopped fresh parsley
  • 1 (15-oz) can chickpeas, drained and rinsed

Side Dish Instructions

  1. Prepare couscous according to package directions; let stand 10 minutes.
  2. Toss couscous with parsley, chickpeas, and salt and pepper to taste.
