Pineapple-Glazed Salmon
Couscous with Chickpeas
Ingredients
- 2 (6-oz) salmon fillets (or other firm fish)
- ¼ tsp kosher salt
- 2 Tbsp pineapple preserves
- 2 tsp fresh lemon juice
- 1½ tsp olive oil
- ⅛ tsp cayenne pepper
- ½ tsp soy sauce
- 1 clove garlic, minced
- 1 green onion, chopped
Instructions
- Preheat broiler. Place fish on a foil-lined baking sheet; sprinkle with salt.
- Process preserves, lemon juice, oil, cayenne pepper, soy sauce, and garlic in a food processor until smooth. Brush over fish. Broil 8 minutes or to desired doneness. Sprinkle with green onions.

- ½ cup couscous
- 2 tsp chopped fresh parsley
- 1 (15-oz) can chickpeas, drained and rinsed
Side Dish Instructions
- Prepare couscous according to package directions; let stand 10 minutes.
- Toss couscous with parsley, chickpeas, and salt and pepper to taste.
