Avocados with Tropical Topping

Ingredients

  • ¼ cup unsweetened coconut flakes
  • ¼ cup chopped macadamia nuts
  • 1 cup diced pineapple
  • 1 tsp fresh lime juice
  • 1 tsp honey
  • 2 avocados, pitted

Instructions

  1. Toast coconut and nuts in a dry skillet over medium-high heat 3 to 4 minutes or until golden and fragrant.
  2. Combine pineapple, lime juice and honey.
  3. Lightly sprinkle avocados with salt.
  4. Top avocado halves with pineapple mixture; sprinkle with coconut topping.
