Kale-Sausage Quiche with Sweet Potato Crust

Ingredients

  • 1 (6-oz) sweet potato
  • 2 tsp olive oil
  • ¼ tsp salt
  • ½ tsp pepper
  • ½ lb lean turkey breakfast sausage
  • 1 (5-oz) pkg baby kale
  • 6 large eggs

Instructions

  1. Preheat oven to 350°F.
  2. Thinly slice sweet potato, using a mandoline or sharp knife.
  3. Combine potatoes, oil, salt and ¼ tsp pepper; layer half on bottom of a pie plate.
  4. Cut the remaining sweet potatoes in half; line sides of pie plate with remaining sweet potatoes, round sides up.
  5. Bake 20 minutes.
  6. Meanwhile, cook sausage in a large nonstick skillet coated with cooking spray over medium heat 5 to 6 minutes or until no longer pink, stirring to crumble.
  7. Add kale; cook 1 to 2 minutes or until wilted. Spoon over potatoes in pie plate.
  8. Whisk together eggs and ¼ tsp pepper; pour over sausage mixture.
  9. Increase oven temperature to 375°F.
  10. Bake 35 minutes or until center is set. Let cool. Cut into wedges.
