Kale-Sausage Quiche with Sweet Potato Crust

Ingredients
- 1 (6-oz) sweet potato
- 2 tsp olive oil
- ¼ tsp salt
- ½ tsp pepper
- ½ lb lean turkey breakfast sausage
- 1 (5-oz) pkg baby kale
- 6 large eggs
Instructions
- Preheat oven to 350°F.
- Thinly slice sweet potato, using a mandoline or sharp knife.
- Combine potatoes, oil, salt and ¼ tsp pepper; layer half on bottom of a pie plate.
- Cut the remaining sweet potatoes in half; line sides of pie plate with remaining sweet potatoes, round sides up.
- Bake 20 minutes.
- Meanwhile, cook sausage in a large nonstick skillet coated with cooking spray over medium heat 5 to 6 minutes or until no longer pink, stirring to crumble.
- Add kale; cook 1 to 2 minutes or until wilted. Spoon over potatoes in pie plate.
- Whisk together eggs and ¼ tsp pepper; pour over sausage mixture.
- Increase oven temperature to 375°F.
- Bake 35 minutes or until center is set. Let cool. Cut into wedges.
