Turkey Sausage-and-Cheddar Cheese Breakfast Burritos

Ingredients

  • ½ lb lean turkey breakfast sausage
  • 4 large eggs, beaten
  • 4 (0.67-oz) slices reduced-fat Cheddar cheese
  • 4 taco-size low-carb tortillas
  • ¼ cup refrigerated salsa
  • 2 Tbsp chopped green onion

Instructions

  1. Cook sausage in a large nonstick skillet over medium heat 6 minutes or until browned, stirring to crumble.
  2. Drain on a paper towel-lined plate, reserving 1 Tbsp drippings in pan.
  3. Add eggs to drippings in skillet; cook over medium heat 2 minutes until mixture begins to set on bottom (do not stir).
  4. Draw a spatula through mixture to form large curds. Cook just until thickened.
  5. Place 1 slice cheese in center of each tortilla. Top with sausage, egg, salsa and green onion.
  6. Roll up tortillas, tucking in ends. Cut in half to serve.
