Turkey Sausage-and-Cheddar Cheese Breakfast Burritos

Ingredients
- ½ lb lean turkey breakfast sausage
- 4 large eggs, beaten
- 4 (0.67-oz) slices reduced-fat Cheddar cheese
- 4 taco-size low-carb tortillas
- ¼ cup refrigerated salsa
- 2 Tbsp chopped green onion
Instructions
- Cook sausage in a large nonstick skillet over medium heat 6 minutes or until browned, stirring to crumble.
- Drain on a paper towel-lined plate, reserving 1 Tbsp drippings in pan.
- Add eggs to drippings in skillet; cook over medium heat 2 minutes until mixture begins to set on bottom (do not stir).
- Draw a spatula through mixture to form large curds. Cook just until thickened.
- Place 1 slice cheese in center of each tortilla. Top with sausage, egg, salsa and green onion.
- Roll up tortillas, tucking in ends. Cut in half to serve.
