Grapefruit, Avocado and Smoked Salmon Breakfast Salad
Ingredients
- 1 large grapefruit
- ¼ cup extra virgin olive oil
- 1 Tbsp fresh lime juice
- 2 tsp honey
- ½ tsp salt
- ½ tsp pepper
- 1 (5-oz) pkg baby arugula
- 1 (8-oz) pkg wild-caught smoked salmon, coarsely chopped
- 1 avocado, sliced
Instructions
- Remove peel from grapefruit with a paring knife.
- Slice grapefruit crosswise into ¼-inch-thick rounds over a small bowl to collect the juices.
- Combine collected grapefruit juice, oil, lime juice, honey and salt and pepper.
- Combine arugula, grapefruit slices, salmon and avocados; drizzle with dressing.
- Toss to coat.
