Grapefruit, Avocado and Smoked Salmon Breakfast Salad

Ingredients

  • 1 large grapefruit
  • ¼ cup extra virgin olive oil
  • 1 Tbsp fresh lime juice
  • 2 tsp honey
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (5-oz) pkg baby arugula
  • 1 (8-oz) pkg wild-caught smoked salmon, coarsely chopped
  • 1 avocado, sliced

Instructions

  1. Remove peel from grapefruit with a paring knife.
  2. Slice grapefruit crosswise into ¼-inch-thick rounds over a small bowl to collect the juices.
  3. Combine collected grapefruit juice, oil, lime juice, honey and salt and pepper.
  4. Combine arugula, grapefruit slices, salmon and avocados; drizzle with dressing.
  5. Toss to coat.
