Fall Kale Salad
Ingredients
- 1 (16-oz) pkg sliced bacon, chopped
- ½ cup balsamic vinegar
- 2 Tbsp Dijon mustard
- 1 Tbsp brown sugar
- 2 bunches kale, shredded
- 2 apples, thinly sliced
- 1 cup chopped walnuts
- 1 (4-oz) pkg crumbled feta cheese
Instructions
- Cook bacon in a large skillet over medium heat until crisp. Drain, reserving ⅓ cup drippings in skillet. Stir in vinegar, mustard, and sugar; cook over medium heat until sugar is melted.
- Meanwhile, toss together kale, apples, nuts, and bacon in a large bowl. Drizzle with vinegar mixture; toss until kale is slightly wilted. Divide salad among 6 plates; sprinkle with cheese.
