Fall Kale Salad

Ingredients

  • 1 (16-oz) pkg sliced bacon, chopped
  • ½ cup balsamic vinegar
  • 2 Tbsp Dijon mustard
  • 1 Tbsp brown sugar
  • 2 bunches kale, shredded
  • 2 apples, thinly sliced
  • 1 cup chopped walnuts
  • 1 (4-oz) pkg crumbled feta cheese

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp. Drain, reserving ⅓ cup drippings in skillet. Stir in vinegar, mustard, and sugar; cook over medium heat until sugar is melted.
  2. Meanwhile, toss together kale, apples, nuts, and bacon in a large bowl. Drizzle with vinegar mixture; toss until kale is slightly wilted. Divide salad among 6 plates; sprinkle with cheese.
