Roasted Chicken Thighs with Grapes
Broccoli with BaconIngredients
- 1½ cups seedless red or black grapes
- 1 red onion, cut into thin wedges
- 6 sprigs fresh thyme
- 2 Tbsp olive oil
- 1 lb boneless, skinless chicken thighs
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 425°F. Toss together grapes, onion, thyme, and oil on a foil-lined rimmed baking sheet; spread in a single layer. Arrange chicken over grapes; sprinkle with salt and pepper.
- Bake 20 minutes or until chicken is done. Increase oven temperature to broil. Broil 2 to 3 minutes or until chicken is browned.

- 3 slices bacon
- ½ (12-oz) pkg broccoli florets
- 2 Tbsp olive oil
- 1 Tbsp red wine vinegar
- 1 tsp Dijon mustard
- ⅛ tsp garlic salt
- ⅛ tsp pepper
Side Dish Instructions
- Place bacon on a paper towel-lined plate. Microwave at HIGH 3 minutes or until crispy.
- Cook broccoli in boiling water to cover in a saucepan 1 minute or until bright green; drain. Plunge broccoli into ice-cold water, and drain again.
- Whisk together oil, vinegar, mustard, garlic salt, and pepper in a bowl. Add broccoli and bacon; toss.
