Coconut Snowballs

Ingredients

  • 4 cups unsweetened coconut, divided
  • 1 cup almond flour
  • ⅓ cup honey
  • 2 tsp coconut extract
  • 2 to 3 Tbsp water

Instructions

  1. Process 3 cups coconut, flour, honey, and coconut extract in a food processor 1 minute, stopping to scrape sides of bowl as needed. Gradually add water until a ball of dough forms.
  2. Roll dough into 1-inch balls; immediately roll in 1 cup coconut. Store in an airtight container in refrigerator.
