Coconut Snowballs
Ingredients
- 4 cups unsweetened coconut, divided
- 1 cup almond flour
- ⅓ cup honey
- 2 tsp coconut extract
- 2 to 3 Tbsp water
Instructions
- Process 3 cups coconut, flour, honey, and coconut extract in a food processor 1 minute, stopping to scrape sides of bowl as needed. Gradually add water until a ball of dough forms.
- Roll dough into 1-inch balls; immediately roll in 1 cup coconut. Store in an airtight container in refrigerator.
