Chickpea-Feta Pita Sandwiches

Easy Caramelized Onion Dip and Chips

Ingredients

  • 1½ cups crumbled feta cheese
  • ⅔ cup thinly sliced red onion
  • ¾ cup chopped fresh parsley
  • 2 (15-oz) cans chickpeas, drained and rinsed
  • ¼ cup olive oil
  • ½ tsp ground cumin
  • 3 whole wheat pita bread rounds, cut in half

Instructions

  1. Toss together all ingredients except pita rounds.
  2. Divide chickpea mixture among pita halves.

Side Dish Ingredients

  • 2 onions, halved and sliced
  • 3 Tbsp melted butter
  • 1 cup 2% reduced-fat plain Greek yogurt
  • ⅓ cup vegetable oil
  • 2 Tbsp fresh lemon juice
  • 2 (7.5-oz) pkg sweet potato chips

Side Dish Instructions

  1. Cook onions in melted butter in a large skillet over low heat, stirring often, until golden.
  2. Combine yogurt, oil, and lemon juice.
  3. Stir in onions; season wit.  salt and pepper to taste.
  4. Serve with chips.
