Chickpea-Feta Pita Sandwiches
Easy Caramelized Onion Dip and Chips
Ingredients
- 1½ cups crumbled feta cheese
- ⅔ cup thinly sliced red onion
- ¾ cup chopped fresh parsley
- 2 (15-oz) cans chickpeas, drained and rinsed
- ¼ cup olive oil
- ½ tsp ground cumin
- 3 whole wheat pita bread rounds, cut in half
Instructions
- Toss together all ingredients except pita rounds.
- Divide chickpea mixture among pita halves.
Side Dish Ingredients
- 2 onions, halved and sliced
- 3 Tbsp melted butter
- 1 cup 2% reduced-fat plain Greek yogurt
- ⅓ cup vegetable oil
- 2 Tbsp fresh lemon juice
- 2 (7.5-oz) pkg sweet potato chips
Side Dish Instructions
- Cook onions in melted butter in a large skillet over low heat, stirring often, until golden.
- Combine yogurt, oil, and lemon juice.
- Stir in onions; season wit. salt and pepper to taste.
- Serve with chips.
