Crunchy Deviled Chicken

Ingredients
- 3 Tbsp spicy brown mustard
- 1 large egg
- ½ tsp smoked paprika
- 1 lb skinless, boneless chicken thighs
- 1¼ cups panko
- 1 lb medium carrots, halved lengthwise
- 1 Tbsp olive oil
- Kosher salt
- Pepper
- Chopped parsley and mixed green salad, for serving
Instructions
- Heat oven to 450°F. In a bowl, whisk together mustard, egg and paprika. Place panko in a second bowl.
- Dip chicken in egg mixture, then coat in panko, pressing gently to help it adhere and place on a non-stick foil lined baking sheet.
- On a second sheet, toss the carrots with oil and ¼ tsp each salt and pepper. Roast both trays until the chicken is cooked through and the carrots are golden brown and tender, 18 to 22 minutes. Sprinkle with parsley and serve with a salad, if desired.
