Apricot-Glazed Pork Stir-Fry

Ingredients

  • 2 cups long-grain white rice
  • 2 (1-lb) pork tenderloins, trimmed and cut into 1-inch pieces
  • 2 Tbsp vegetable oil
  • 1 (20-oz) pkg frozen vegetable stir-fry blend, thawed
  • 1 (10-oz) pkg angel hair coleslaw
  • ¼ cup water
  • ¾ cup apricot preserves
  • ¼ cup honey
  • ½ tsp garlic powder

Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, season pork lightly with salt and pepper. Cook pork in hot oil in a large, deep skillet over medium-high heat until browned. Remove from skillet; set aside.
  3. Add stir-fry blend, coleslaw, and water to skillet; cook, stirring often, 4 minutes or until crisp-tender.
  4. Stir together preserves, honey, and garlic powder; add to skillet along with pork. Bring to a simmer, and cook 2 to 3 minutes or until sauce is thickened. Serve over rice.
