Garlic-and-Herb Chicken Skillet
Ingredients
- 1 (16-oz) pkg bow-tie pasta
- 1 lb asparagus, trimmed and cut into 2-inch pieces
- 2 Tbsp olive oil
- 2 Tbsp butter
- 1½ lb boneless, skinless chicken breasts, thinly sliced
- 1 (8-oz) pkg whole mushrooms, sliced
- 1 cup chicken broth
- 1 (5.2-oz) pkg garlic-herb cheese (such as Boursin)
Instructions
- Cook pasta according to package directions, adding asparagus during last minute of cooking; drain and keep warm.
- Heat oil and butter in a large, deep skillet over medium-high heat; add chicken and mushrooms. Cook, stirring often, until chicken is done. Add broth and cheese, stirring until cheese is melted. Stir in pasta and asparagus.
