Greek Shrimp and Tomatoes

Ingredients

  • 2 lb peeled and deveined medium-size, raw shrimp
  • 1 tsp kosher salt
  • ¼ tsp pepper
  • 3 cloves garlic, smashed
  • 3 Tbsp olive oil
  • 1 pint grape tomatoes
  • 1½ cups crumbled feta cheese
  • ½ cup chopped fresh basil

Instructions

  1. Sprinkle shrimp with salt and pepper.
  2. Cook garlic in hot oil in a nonstick skillet over medium heat 2 to 3 minutes, turning garlic frequently so it doesn't burn; discard garlic.
  3. Increase heat to medium-high, and add shrimp to hot oil. Cook 2 minutes per side or until shrimp turn pink; remove from skillet.
  4. Add tomatoes to skillet, and cook 3 to 4 minutes or until tomatoes begin to burst. Remove from heat.
  5. Toss shrimp with tomato mixture, and sprinkle with cheese and basil.

Side Dish Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp olive oil
  • 1 Tbsp Italian seasoning
  • 1 Tbsp fresh lemon juice
  • ½ tsp garlic salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook broccoli according to package directions; transfer to a large bowl.
  2. Add remaining ingredients; toss.
