Greek Shrimp and Tomatoes
Italian BroccoliIngredients
- 2 lb peeled and deveined medium-size, raw shrimp
- 1 tsp kosher salt
- ¼ tsp pepper
- 3 cloves garlic, smashed
- 3 Tbsp olive oil
- 1 pint grape tomatoes
- 1½ cups crumbled feta cheese
- ½ cup chopped fresh basil
Instructions
- Sprinkle shrimp with salt and pepper.
- Cook garlic in hot oil in a nonstick skillet over medium heat 2 to 3 minutes, turning garlic frequently so it doesn't burn; discard garlic.
- Increase heat to medium-high, and add shrimp to hot oil. Cook 2 minutes per side or until shrimp turn pink; remove from skillet.
- Add tomatoes to skillet, and cook 3 to 4 minutes or until tomatoes begin to burst. Remove from heat.
- Toss shrimp with tomato mixture, and sprinkle with cheese and basil.
Side Dish Ingredients
- 2 (12-oz) pkg broccoli florets
- 2 Tbsp olive oil
- 1 Tbsp Italian seasoning
- 1 Tbsp fresh lemon juice
- ½ tsp garlic salt
- ½ tsp pepper
Side Dish Instructions
- Cook broccoli according to package directions; transfer to a large bowl.
- Add remaining ingredients; toss.
