Cheeseburger Casserole

Vegetable Crudités with Ranch Dip

Ingredients

  • 6 slices bacon
  • 1½ lb ground beef
  • ½ onion, chopped
  • 1 cup shredded Cheddar cheese, divided
  • 3 large dill pickles, chopped
  • 1 Roma tomato, seeded and chopped
  • 6 slices American cheese
  • ½ head iceberg lettuce, shredded

Instructions

  1. Preheat oven to 350°F. Cook bacon according to package directions.
  2. Meanwhile, cook beef and onion in a large pot over medium-high heat; drain. Stir in ½ cup Cheddar cheese, bacon, pickles, and tomato.
  3. Spoon into an 11- x 7-inch casserole dish. Sprinkle with ½ cup Cheddar; top with American cheese.
  4. Bake 15 minutes or until cheese is melted and browned. Serve with shredded lettuce.

Side Dish Ingredients

  • 3 bell peppers, cut into thin strips
  • 1 (12-oz) pkg baby carrots
  • 3 stalks celery, cut into sticks
  • 1 cup refrigerated yogurt Ranch dressing (such as Marie's)

Side Dish Instructions

  1. Serve vegetables with dressing.
