Hunter-Style Chicken Drumsticks

Ingredients

  • 3 slices bacon
  • 12 bone-in, skin-on chicken drumsticks (skin removed, if desired)
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1 (8-oz) pkg sliced baby portobello mushrooms
  • 3 cloves garlic, minced
  • ½ cup white wine (or use chicken broth)
  • ½ tsp dried crushed rosemary 
  • 1 (28-oz) can crushed tomatoes

Instructions

  1. Cook bacon in a Dutch oven over medium heat until crisp; drain, reserving drippings in pot. Crumble bacon.
  2. Sprinkle chicken with salt and pepper. Cook in hot drippings 3 minutes per side or until browned. Remove and keep warm.
  3. Add oil to drippings in pot; cook mushrooms and garlic in hot oil 8 minutes or until tender. Add wine, rosemary, and tomatoes, scraping pot with to loosen browned bits.
  4. Add bacon and chicken. Cover and simmer 15 minutes or until chicken is done.

Side Dish Ingredients

  • 1 (10-oz) pkg mixed greens
  • ⅓ cup balsamic vinaigrette
  • ½ cup shredded Parmesan cheese

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
