Asian Chicken Salad
Ingredients
- ⅔ cup sliced almonds
- 3 cups shredded rotisserie chicken
- 1 (10-oz) pkg leafy romaine lettuce
- 2 carrots, grated
- 1 English cucumber, halved lengthwise and thinly sliced
- ¼ cup olive oil
- 2 Tbsp rice vinegar
- 2 Tbsp soy sauce
- 1 Tbsp grated ginger
- ½ Tbsp honey
- 1 clove garlic, minced
Instructions
- Toast nuts in a dry skillet over medium heat until fragrant; cool.
- Combine chicken, lettuce, carrots, and cucumber in a bowl.
- Whisk together oil, vinegar, soy sauce, ginger, honey, and garlic. Pour over salad; toss. Top with nuts.
