Asian Chicken Salad

Ingredients

  • ⅔ cup sliced almonds
  • 3 cups shredded rotisserie chicken
  • 1 (10-oz) pkg leafy romaine lettuce
  • 2 carrots, grated
  • 1 English cucumber, halved lengthwise and thinly sliced
  • ¼ cup olive oil
  • 2 Tbsp rice vinegar
  • 2 Tbsp soy sauce
  • 1 Tbsp grated ginger
  • ½ Tbsp honey
  • 1 clove garlic, minced

Instructions

  1. Toast nuts in a dry skillet over medium heat until fragrant; cool.
  2. Combine chicken, lettuce, carrots, and cucumber in a bowl.
  3. Whisk together oil, vinegar, soy sauce, ginger, honey, and garlic. Pour over salad; toss. Top with nuts.
