Mozzarella Burgers in Tomato Gravy
Herbed Spaghetti Squash
Ingredients
- 1½ lb lean ground beef
- ½ tsp salt
- ½ tsp pepper
- 2 (8-oz) pkg sliced baby portobello mushrooms
- 2 Tbsp olive oil
- 1 pint grape tomatoes
- 1 (24-oz) jar marinara sauce (such as Rao's)
- 6 (1-oz) slices fresh mozzarella cheese (or use part-skim slices)
- 2 Tbsp fresh basil leaves, torn
Instructions
- Shape beef into 6 patties; sprinkle both sides with salt and pepper. Cook in a large nonstick skillet over medium heat 4 to 5 minutes per side or until done. Remove from skillet; keep warm, and wipe skillet clean.
- Sauté mushrooms in hot oil in skillet 5 minutes or until tender. Stir in tomatoes and marinara; cook 3 to 4 minutes or until thoroughly heated. Nestle burgers in sauce, and top with cheese; cook 1 minute or until cheese is melted. Sprinkle with basil.
Side Dish Ingredients
- 3 (1-lb) spaghetti squash, halved lengthwise
- 2 Tbsp extra virgin olive oil
- ¼ cup chopped fresh basil
- ½ tsp kosher salt
- ½ tsp pepper
Side Dish Instructions
- Scoop out seeds from squash. Place squash, cut sides down, in a 13- x 9-inch baking dish. Cover with plastic wrap. Microwave at HIGH 15 minutes or until fork-tender.
- Scrape squash with a fork to remove spaghetti-like strands. Place strands in a large bowl. Stir in oil, basil, salt, and pepper.
