Jerk Pork Tenderloin with Mango Salsa
Mashed Sweet Potatoes and Steamed Green Beans
Ingredients
- 2 (1-lb) pork tenderloins, trimmed
- 2 Tbsp Jerk seasoning
- 2 Tbsp olive oil
- 1 (10-oz) pkg diced mangos
- 1 red bell pepper, minced
- 1 jalapeño pepper, seeded and minced
- ¼ cup chopped fresh cilantro
- 2 Tbsp fresh lime juice
Instructions
- Preheat oven to 425°F. Rub pork with Jerk seasoning. Cook in hot oil in a large cast-iron or ovenproof skillet over medium-high heat 5 minutes or until browned on all sides.
- Transfer skillet to oven, and bake 12 to 15 minutes or until pork is done; let stand 5 minutes before slicing.
- Meanwhile, toss together mango, bell pepper, jalapeño, cilantro, and lime juice. Serve salsa over pork.

- 2 (22-oz) pkg refrigerated mashed sweet potatoes
- 2 (8-oz) pkg thin green beans
Side Dish Instructions
- Heat sweet potatoes according to package directions.
- Steam green beans according to package directions; season with salt and pepper to taste.
