Jerk Pork Tenderloin with Mango Salsa

Ingredients

  • 2 (1-lb) pork tenderloins, trimmed
  • 2 Tbsp Jerk seasoning
  • 2 Tbsp olive oil
  • 1 (10-oz) pkg diced mangos
  • 1 red bell pepper, minced
  • 1 jalapeño pepper, seeded and minced
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp fresh lime juice

Instructions

  1. Preheat oven to 425°F. Rub pork with Jerk seasoning. Cook in hot oil in a large cast-iron or ovenproof skillet over medium-high heat 5 minutes or until browned on all sides.
  2. Transfer skillet to oven, and bake 12 to 15 minutes or until pork is done; let stand 5 minutes before slicing.
  3. Meanwhile, toss together mango, bell pepper, jalapeño, cilantro, and lime juice. Serve salsa over pork.

Side Dish Ingredients

  • 2 (22-oz) pkg refrigerated mashed sweet potatoes
  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Heat sweet potatoes according to package directions.
  2. Steam green beans according to package directions; season with salt and pepper to taste.
