Sausage and Tortellini Florentine Soup

Ingredients

  • 1½ lb ground hot Italian turkey sausage
  • 1½ Tbsp minced garlic
  • 4 cups 100% vegetable juice
  • 1 (32-oz) carton chicken broth
  • 1 (12-oz) pkg dried 3-cheese tortellini
  • 1 (6-oz) pkg baby spinach

Instructions

  1. Cook sausage and garlic in a large Dutch oven over medium heat until sausage is browned and crumbly; drain, and return to pot.
  2. Stir in vegetable juice and broth; bring to a boil, reduce heat, and simmer 5 minutes. Add tortellini to pot; simmer 10 minutes or until tender, stirring occasionally. Stir in spinach until wilted. Season with salt and pepper to taste.

Side Dish Ingredients

  • ¼ cup butter, melted
  • ¾ tsp garlic powder
  • ½ tsp dried oregano
  • 1 (16.3-oz) can refrigerated buttermilk biscuits

Side Dish Instructions

  1. Stir together melted butter, garlic powder, and oregano. Separate biscuits and place in a 9-inch cake pan. Brush butter mixture over biscuits. Bake according to package directions.
