Sausage and Tortellini Florentine Soup

Ingredients
- 1½ lb ground hot Italian turkey sausage
- 1½ Tbsp minced garlic
- 4 cups 100% vegetable juice
- 1 (32-oz) carton chicken broth
- 1 (12-oz) pkg dried 3-cheese tortellini
- 1 (6-oz) pkg baby spinach
Instructions
- Cook sausage and garlic in a large Dutch oven over medium heat until sausage is browned and crumbly; drain, and return to pot.
- Stir in vegetable juice and broth; bring to a boil, reduce heat, and simmer 5 minutes. Add tortellini to pot; simmer 10 minutes or until tender, stirring occasionally. Stir in spinach until wilted. Season with salt and pepper to taste.
Side Dish Ingredients
- ¼ cup butter, melted
- ¾ tsp garlic powder
- ½ tsp dried oregano
- 1 (16.3-oz) can refrigerated buttermilk biscuits
Side Dish Instructions
- Stir together melted butter, garlic powder, and oregano. Separate biscuits and place in a 9-inch cake pan. Brush butter mixture over biscuits. Bake according to package directions.
