Shrimp and Sausage Creole
Steamed Rice and Garlic Broccolini
Ingredients
- 1 (12-oz) pkg fully cooked andouille sausage, cut into half-moon slices
- 1 onion, chopped
- 1 green bell pepper, diced
- 2 Tbsp olive oil
- 1 (14.5-oz) can diced tomatoes
- 2 Tbsp minced garlic
- 2 tsp Cajun seasoning
- 1 lb peeled and deveined, medium-size raw shrimp
Instructions
- Cook sausage, onion, and bell pepper in hot oil in a large Dutch oven over medium heat until onion is tender.
- Add tomatoes, garlic, and Cajun seasoning. Bring to boil; reduce heat, and simmer, 5 minutes.
- Stir in shrimp. Cook 5 minutes longer or until shrimp turn pink. Serve over rice.

- 2 (8.8-oz) pouches microwavable long-grain rice
- 2 Tbsp minced garlic
- 3 Tbsp olive oil
- 2 bunches broccolini, trimmed
- ¼ cup water
Side Dish Instructions
- Heat rice according to package directions.
- Cook garlic in hot oil in a large nonstick skillet over medium heat 1 minute. Add broccolini and water; cover, and cook 3 to 4 minutes or until crisp-tender. Season to taste.
