Shrimp and Sausage Creole

Ingredients

  • 1 (12-oz) pkg fully cooked andouille sausage, cut into half-moon slices
  • 1 onion, chopped
  • 1 green bell pepper, diced
  • 2 Tbsp olive oil
  • 1 (14.5-oz) can diced tomatoes
  • 2 Tbsp minced garlic
  • 2 tsp Cajun seasoning
  • 1 lb peeled and deveined, medium-size raw shrimp

Instructions

  1. Cook sausage, onion, and bell pepper in hot oil in a large Dutch oven over medium heat until onion is tender.
  2. Add tomatoes, garlic, and Cajun seasoning. Bring to boil; reduce heat, and simmer, 5 minutes.
  3. Stir in shrimp. Cook 5 minutes longer or until shrimp turn pink. Serve over rice.

Side Dish Ingredients

  • 2 (8.8-oz) pouches microwavable long-grain rice
  • 2 Tbsp minced garlic
  • 3 Tbsp olive oil
  • 2 bunches broccolini, trimmed
  • ¼ cup water

Side Dish Instructions

  1. Heat rice according to package directions.
  2. Cook garlic in hot oil in a large nonstick skillet over medium heat 1 minute. Add broccolini and water; cover, and cook 3 to 4 minutes or until crisp-tender. Season to taste.
