Sausage, Broccolini, and Pepper Sauté

Ingredients

  • ½ lb pork sausage links
  • 2 Tbsp olive oil
  • 1 bunch Broccolini, trimmed
  • 1 organic red bell pepper, thinly sliced
  • 2 Tbsp low-sodium chicken broth
  • 1½ Tbsp balsamic vinegar
  • ½ Tbsp honey
  • ½ Tbsp Dijon mustard
  • 1 clove garlic, minced
  • ¼ tsp pepper

Instructions

  1. Cook sausage in hot oil in a Dutch oven over medium heat until browned and done. Remove sausage from pot, and keep warm.
  2. Add Broccolini and bell pepper to pot. Sauté 5 minutes or until tender.
  3. Stir together remaining ingredients. Add to pot along with sausage. Cook 5 minutes or until sauce reduces slightly.

Side Dish Ingredients

  • ¾ lb organic Yukon Gold potatoes, cut into 1-inch wedges
  • 2 Tbsp olive oil
  • ½ Tbsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together potatoes, oil, garlic powder, salt, and pepper on a greased rimmed baking sheet. Spread potatoes in a single layer.
  2. Bake 20 to 25 minutes or until potatoes are browned and tender, stirring occasionally.
