Smoky Chicken Carnitas
Sautéed Onion and Squash
Ingredients
- 1 (6-oz) can tomato paste
- ½ cup chicken broth
- 6 cloves garlic
- 1 Tbsp minced chipotle chile pepper in adobo sauce
- 1 tsp dried oregano
- ½ tsp salt
- ½ tsp pepper
- 2 lb boneless, skinless chicken thighs, cut into 2-inch pieces
- 1 head romaine lettuce, leaves separated
Instructions
- Preheat oven to 350°F.
- Combine tomato paste, broth, garlic, chipotle pepper, oregano, salt, and pepper in a 13- x 9-inch baking dish. Add chicken, tossing to coat. Cover with foil.
- Bake 45 to 55 minutes or until chicken is done.
- Shred chicken. Serve in lettuce leaves.

- 1 onion, sliced
- 2 zucchini, sliced
- 2 yellow squash, sliced
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 2 tsp fresh lime juice
Side Dish Instructions
- Sauté onion, zucchini, yellow squash, salt, and pepper in hot oil in a large skillet over medium-high heat 10 to 12 minutes or until tender, stirring occasionally. Remove from heat; stir in lime juice.
