Curried Skirt Steak

Carrot-Raisin Salad

Ingredients

  • 2 Tbsp olive oil
  • 1 Tbsp curry powder
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp minced garlic
  • 2 lb beef skirt steak (or use flank steak)

Instructions

  1. Preheat broiler. Combine oil, curry powder, salt, pepper, and garlic in a small bowl. Rub over both sides of steak. Place on a roasting rack in a broiler pan.
  2. Broil 4 to 5 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.

Side Dish Ingredients

  • 1 (10-oz) pkg shredded carrots
  • ⅓ cup raisins
  • ½ cup chopped pecans
  • ¼ cup olive oil
  • ¼ cup white wine vinegar
  • 2 Tbsp Dijon mustard
  • 1 Tbsp grated fresh ginger
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Combine carrots, raisins, and pecans in a bowl.
  2. Whisk together oil, vinegar, mustard, ginger, salt, and pepper. Add to carrot mixture; toss.
  3. Serve immediately or cover and chill up to 1 day.
