Curried Skirt Steak
Carrot-Raisin Salad
Ingredients
- 2 Tbsp olive oil
- 1 Tbsp curry powder
- 1 tsp salt
- ½ tsp pepper
- 1 tsp minced garlic
- 2 lb beef skirt steak (or use flank steak)
Instructions
- Preheat broiler. Combine oil, curry powder, salt, pepper, and garlic in a small bowl. Rub over both sides of steak. Place on a roasting rack in a broiler pan.
- Broil 4 to 5 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
Side Dish Ingredients
- 1 (10-oz) pkg shredded carrots
- ⅓ cup raisins
- ½ cup chopped pecans
- ¼ cup olive oil
- ¼ cup white wine vinegar
- 2 Tbsp Dijon mustard
- 1 Tbsp grated fresh ginger
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Combine carrots, raisins, and pecans in a bowl.
- Whisk together oil, vinegar, mustard, ginger, salt, and pepper. Add to carrot mixture; toss.
- Serve immediately or cover and chill up to 1 day.
