Barbecue Pork Shepherd's Pie

Ingredients
- 3 lb red potatoes, cubed
- 1 (8-oz) carton sour cream
- 1 (1-oz) envelope Ranch dressing mix
- 1 (16-oz) container pulled barbecue pork in sauce
- 1 cup barbecue sauce
- 1 (15-oz) can corn, drained
- 1 (15-oz) can pinto beans, drained and rinsed
- 1 cup shredded Cheddar cheese
Instructions
- Bring potatoes and water to cover to a boil in a large Dutch oven; reduce heat, and simmer 10 minutes or until potatoes are tender. Drain and return to pot. Stir in sour cream and dressing mix; mash to desired consistency.
- Meanwhile, preheat oven to 400°F. Spoon pork and barbecue sauce into a large ovenproof greased baking dish. Top with corn and beans. Spoon mashed potatoes over mixture; sprinkle with cheese. Bake 30 minutes or until hot and bubbly.

- 2 Tbsp butter

- Steam green beans according to package directions; toss with butter, and season with salt and pepper to taste.
