Barbecue Pork Shepherd's Pie

Ingredients

  • 3 lb red potatoes, cubed
  • 1 (8-oz) carton sour cream
  • 1 (1-oz) envelope Ranch dressing mix
  • 1 (16-oz) container pulled barbecue pork in sauce
  • 1 cup barbecue sauce
  • 1 (15-oz) can corn, drained
  • 1 (15-oz) can pinto beans, drained and rinsed
  • 1 cup shredded Cheddar cheese

Instructions

  1. Bring potatoes and water to cover to a boil in a large Dutch oven; reduce heat, and simmer 10 minutes or until potatoes are tender. Drain and return to pot. Stir in sour cream and dressing mix; mash to desired consistency.
  2. Meanwhile, preheat oven to 400°F. Spoon pork and barbecue sauce into a large ovenproof greased baking dish. Top with corn and beans. Spoon mashed potatoes over mixture; sprinkle with cheese. Bake 30 minutes or until hot and bubbly.

  • 1 (12-oz) pkg frozen green beans
  • 2 Tbsp butter

Side Dish Instructions

  1. Steam green beans according to package directions; toss with butter, and season with salt and pepper to taste.
