Parmesan Chicken Piccata

Ingredients

  • 3 (8-oz) boneless, skinless chicken breasts, cut in half lengthwise
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp flour
  • 2 Tbsp olive oil
  • ¼ cup fresh lemon juice
  • ¼ cup chicken broth
  • 3 Tbsp drained capers
  • 2 Tbsp butter
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Sprinkle chicken with salt, pepper, and flour in a shallow dish.
  2. Cook chicken, in batches if necessary, in hot oil in a large nonstick skillet over medium heat 2 to 3 minutes per side or until done. Remove chicken from pan.
  3. Add lemon juice and broth to pan, scraping pan to loosen browned bits. Cook 2 minutes or until liquid is reduced by half.
  4. Add capers and butter; cook, stirring constantly, 2 minutes longer or until slightly thickened.
  5. Spoon sauce over chicken; sprinkle with cheese.

  • ½ tsp pepper
