Chicken, Apple, and Kale Salad
Ingredients
- 1 (5-oz) pkg baby kale
- 3 cups chopped rotisserie chicken
- 1 cup thinly sliced red onion
- 1 cup sliced black olives
- 2 tart apples, sliced
- 3 Tbsp fresh lemon juice
- ¼ cup extra virgin olive oil
- 1 cup crumbled feta cheese
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Combine kale, chicken, onion, and olives in a bowl.
- Toss apples with lemon juice; add to salad. Toss salad with oil, cheese, salt, and pepper.
