Chicken, Apple, and Kale Salad

Ingredients

  • 1 (5-oz) pkg baby kale
  • 3 cups chopped rotisserie chicken
  • 1 cup thinly sliced red onion
  • 1 cup sliced black olives
  • 2 tart apples, sliced
  • 3 Tbsp fresh lemon juice
  • ¼ cup extra virgin olive oil
  • 1 cup crumbled feta cheese
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Combine kale, chicken, onion, and olives in a bowl.
  2. Toss apples with lemon juice; add to salad. Toss salad with oil, cheese, salt, and pepper.
