English Muffin French Toast
Fresh Blueberry Sauce
Ingredients
- ½ cup 1% low-fat milk
- ½ tsp sugar
- ¼ tsp pure vanilla extract
- 2 large eggs, beaten
- 4 whole wheat English muffins, split
Instructions
- Whisk together milk, sugar, vanilla and eggs in a shallow dish.
- Working in batches, dip muffin halves into egg mixture, soaking each side.
- Cook on a large griddle or in a large nonstick skillet coated with cooking spray over medium-high heat 1 to 2 minutes per side or until golden.
- Serve with Fresh Blueberry Sauce.

- 1 (4.4-oz) pkg blueberries
- ¼ cup sugar
- 1 Tbsp water
- 1 tsp fresh lemon juice
- ¼ tsp grated lemon rind
Side Dish Instructions
- Combine blueberries, sugar and water in a small saucepan; bring to a simmer.
- Cook 4 to 6 minutes or until slightly thickened, stirring occasionally.
- Stir in lemon juice and rind.
