English Muffin French Toast

Fresh Blueberry Sauce

Ingredients

  • ½ cup 1% low-fat milk
  • ½ tsp sugar
  • ¼ tsp pure vanilla extract
  • 2 large eggs, beaten
  • 4 whole wheat English muffins, split

Instructions

  1. Whisk together milk, sugar, vanilla and eggs in a shallow dish.
  2. Working in batches, dip muffin halves into egg mixture, soaking each side.
  3. Cook on a large griddle or in a large nonstick skillet coated with cooking spray over medium-high heat 1 to 2 minutes per side or until golden.
  4. Serve with Fresh Blueberry Sauce.

Side Dish Ingredients

  • 1 (4.4-oz) pkg blueberries
  • ¼ cup sugar
  • 1 Tbsp water
  • 1 tsp fresh lemon juice
  • ¼ tsp grated lemon rind

Side Dish Instructions

  1. Combine blueberries, sugar and water in a small saucepan; bring to a simmer.
  2. Cook 4 to 6 minutes or until slightly thickened, stirring occasionally.
  3. Stir in lemon juice and rind.
