Quick Chicken and Bacon Melt Casserole

Ingredients

  • 1 (16-oz) loaf French bread, torn into bite-size pieces
  • 1 (16-oz) pkg grilled and ready chicken breasts, chopped
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 1 (10-oz) can cream of chicken soup
  • 1 (8-oz) carton sour cream
  • ½ cup mayonnaise
  • 2 Tbsp Dijon mustard
  • 1 Tbsp fresh lemon juice
  • 1 (2.5-oz) pkg real bacon pieces

Instructions

  1. Preheat oven to 400°F. Stir together all ingredients, and spoon into a lightly greased 13- x 9-inch baking dish. Bake 30 to 35 minutes or until hot and bubbly.

Side Dish Ingredients

  • 1 (12-oz) pkg classic salad mix
  • 2 apples, chopped (preferably a sweet, crisp variety)
  • ¼ cup grated Parmesan cheese
  • ½ cup balsamic vinaigrette

Side Dish Instructions

  1. Toss together all ingredients just before serving.
