Garlic-Butter Pork Chops
Parsley Potatoes and BroccoliIngredients
- 6 (1-inch-thick) bone-in pork chops
- 3 Tbsp butter, melted
- 3 cloves garlic, minced
- 1 Tbsp minced fresh rosemary
- 2 Tbsp olive oil
Instructions
- Preheat oven to 400°F. Season pork lightly with salt and pepper.
- Stir together melted butter, garlic, and rosemary. Cook pork in hot oil in a large ovenproof skillet over medium-high heat 3 minutes. Turn pork, and brush with half of butter mixture.
- Transfer skillet to oven, and bake 10 minutes or until a meat thermometer inserted reads 145°F. Brush with remaining butter mixture, and let stand 5 minutes before serving.

- 2 lb small red potatoes, quartered
- ¼ cup butter
- 2 Tbsp fresh lemon juice
- 2 Tbsp chopped fresh parsley
- 1 (12-oz) pkg frozen broccoli florets
Side Dish Instructions
- Steam potatoes in a steamer basket over boiling water 10 to 12 minutes or until tender.
- Toss potatoes with butter, lemon juice, and parsley. Season with salt and pepper to taste.
- Steam broccoli according to package directions; season with salt and pepper to taste.
