Garlic-Butter Pork Chops

Ingredients

  • 6 (1-inch-thick) bone-in pork chops
  • 3 Tbsp butter, melted
  • 3 cloves garlic, minced
  • 1 Tbsp minced fresh rosemary
  • 2 Tbsp olive oil

Instructions

  1. Preheat oven to 400°F. Season pork lightly with salt and pepper.
  2. Stir together melted butter, garlic, and rosemary. Cook pork in hot oil in a large ovenproof skillet over medium-high heat 3 minutes. Turn pork, and brush with half of butter mixture.
  3. Transfer skillet to oven, and bake 10 minutes or until a meat thermometer inserted reads 145°F. Brush with remaining butter mixture, and let stand 5 minutes before serving.

Side Dish Ingredients

  • 2 lb small red potatoes, quartered
  • ¼ cup butter
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp chopped fresh parsley
  • 1 (12-oz) pkg frozen broccoli florets

Side Dish Instructions

  1. Steam potatoes in a steamer basket over boiling water 10 to 12 minutes or until tender.
  2. Toss potatoes with butter, lemon juice, and parsley. Season with salt and pepper to taste.
  3. Steam broccoli according to package directions; season with salt and pepper to taste.
