Baked Barbecue-Ranch Chicken

Scalloped Potatoes and Steamed Green Beans

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1½ cups barbecue sauce
  • 1 (1-oz) envelope Ranch dressing mix

Instructions

  1. Preheat oven to 375°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Place chicken in a lightly greased baking dish.
  2. Stir together barbecue sauce and dressing mix; pour over chicken. Bake 25 minutes or until chicken is done.

  • 2 (4.7-oz) pkg scalloped potatoes
  • 2 (12-oz) pkg frozen green beans

Side Dish Instructions

  1. Cook potatoes according to package directions.
  2. Steam green beans according to package directions; season with salt and pepper to taste.
