Tomato-Spinach Soup

Ingredients

  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 3 Tbsp olive oil
  • 1 Tbsp Italian seasoning
  • ½ tsp crushed red pepper
  • 3 cups organic vegetable broth
  • 1 (28-oz) can BPA-free whole peeled organic tomatoes, undrained and chopped
  • 1 (10-oz) pkg organic baby spinach, chopped
  • ⅛ tsp salt

Instructions

  1. Sauté garlic and onion in hot oil in a Dutch oven over medium heat 5 minutes or until tender; stir in Italian seasoning, red pepper, broth, and tomatoes.
  2. Bring to a boil; add spinach and salt. Reduce heat, and simmer 30 minutes or until soup is slightly thickened.
  3. If desired, use an immersion blender or other blender to puree slightly.

Side Dish Ingredients

  • 6 Tbsp butter
  • 12 slices sandwich bread (preferably whole-grain)
  • 6 slices sharp Cheddar cheese
  • 6 large basil leaves

Side Dish Instructions

  1. Melt 2 Tbsp butter in a large skillet over medium-high heat.
  2. Top 6 bread slices with cheese and basil leaves; cover with 6 bread slices. Cook sandwiches, 2 at a time, in 2 Tbsp butter per batch in skillet until golden and cheese is melted.
