Sausage and Spaghetti Squash Bake

Ingredients

  • 1 spaghetti squash (about 3 lb)
  • 1 (19.5-oz) pkg spicy Italian turkey sausage links, casings removed
  • 1 (8-oz) pkg sliced mushrooms
  • 2 large eggs, lightly beaten
  • 1 (15.5-oz) jar natural marinara sauce (such as Rao's)
  • ¼ cup water
  • 1 organic red bell pepper, chopped
  • 1 onion, chopped
  • ½ tsp pepper
  • 1 (8-oz) block part-skim mozzarella cheese, shredded
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F. Prick spaghetti squash with a fork; microwave at HIGH 1 minute. Cut in half, and remove seeds; return to microwave and cook at HIGH 9 minutes or until squash is tender.
  2. Cool slightly; using a fork, scrape flesh into spaghetti-like strands into a large bowl.
  3. Meanwhile, cook sausage in a large skillet over medium-high heat until browned and crumbly; drain.
  4. Add mushrooms to skillet; sauté 5 minutes or until browned.
  5. Combine squash, sausage, mushrooms, eggs, marinara sauce, water, bell pepper, onion, and pepper; spoon mixture into a lightly greased 13- x 9-inch baking dish.
  6. Sprinkle with cheeses.
  7. Bake 30 minutes or until cheese is melted and casserole is bubbly. Let stand 10 minutes before serving.
