Pork Chops with Strawberry Salsa
Spinach-Goat Cheese SaladIngredients
- 6 boneless pork chops
- ¾ tsp salt, divided
- ½ tsp pepper, divided
- 3 Tbsp olive oil, divided
- 2 Tbsp apple cider vinegar
- 1 Tbsp honey
- 1½ cups chopped organic strawberries
- 1 shallot, minced
- 3 Tbsp chopped fresh basil
- 2 tsp fresh lemon juice
Instructions
- Sprinkle pork with ½ tsp salt and ¼ tsp pepper. Brown pork in 2 Tbsp hot oil in a large skillet over medium-high heat 2 minutes per side.
- Stir together vinegar and honey; add to skillet, and cook 1 minute or until pork chops are done and sauce is syrupy. Remove from heat.
- Stir together strawberries, shallot, basil, lemon juice, ¼ tsp each salt and pepper, and 1 Tbsp oil.
- Serve salsa over pork chops.

- 2 Tbsp apple cider vinegar
- 1 Tbsp honey
- 1 tsp whole-grain mustard
- 3 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- 1 (10-oz) pkg organic baby spinach
- 1 (4-oz) log goat cheese, crumbled
Side Dish Instructions
- Whisk together vinegar, honey, mustard, oil, salt, and pepper in a bowl. Add spinach, and toss. Sprinkle with cheese.
- Divide salad among plates.
