Pork Chops with Strawberry Salsa

Ingredients

  • 6 boneless pork chops
  • ¾ tsp salt, divided
  • ½ tsp pepper, divided
  • 3 Tbsp olive oil, divided
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • 1½ cups chopped organic strawberries
  • 1 shallot, minced
  • 3 Tbsp chopped fresh basil
  • 2 tsp fresh lemon juice

Instructions

  1. Sprinkle pork with ½ tsp salt and ¼ tsp pepper. Brown pork in 2 Tbsp hot oil in a large skillet over medium-high heat 2 minutes per side.
  2. Stir together vinegar and honey; add to skillet, and cook 1 minute or until pork chops are done and sauce is syrupy. Remove from heat.
  3. Stir together strawberries, shallot, basil, lemon juice, ¼ tsp each salt and pepper, and 1 Tbsp oil.
  4. Serve salsa over pork chops.

Side Dish Ingredients

  • 2 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • 1 tsp whole-grain mustard
  • 3 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (10-oz) pkg organic baby spinach
  • 1 (4-oz) log goat cheese, crumbled

Side Dish Instructions

  1. Whisk together vinegar, honey, mustard, oil, salt, and pepper in a bowl. Add spinach, and toss. Sprinkle with cheese.
  2. Divide salad among plates.
