Old-Fashioned Beef Stew

Ingredients
- ¼ cup all-purpose flour
- ½ tsp salt
- ¼ tsp black pepper (optional)
- 2 lb beef chuck roast or beef stew meat, trimmed of fat and cut into 1-inch pieces
- 3 Tbsp vegetable oil
- 2 medium onions, cut into thin wedges
- 1 cup thinly sliced celery
- 4 red-skinned potatoes, cut into 1-inch cubes
- 4 carrots, bias-sliced ¼ inch thick
- 2 cups vegetable juice
- 3 cups reduced-sodium beef broth
- 2 Tbsp Worcestershire sauce
- 1 tsp dried oregano or thyme, crushed
Instructions
- In a large resealable plastic bag combine flour, salt, and, if desired, pepper. Add meat to bag; shake until evenly coated.
- In a large pot brown half the meat in half the oil over medium-high; remove meat. Repeat with remaining meat and oil. In a 4- to 6-quart slow cooker layer meat, onions, celery, potatoes, and carrots.
- Combine broth, vegetable juice, Worcestershire, and oregano. Pour over meat and vegetables. Cover and cook on low 10 to 12 hours or on high 5 to 6 hours or until meat and vegetables are tender.
Side Dish Ingredients
- 1 (5.2-oz) container Boursin cheese with garlic and herb
- ¼ cup sliced green onions
- 1 (12-oz) pkg refrigerated biscuits (10)
- 1 egg yolk
- 1 Tbsp water
- 2 Tbsp grated Parmesan cheese
- Sliced green onions
Side Dish Instructions
- Preheat oven to 400°F. Grease a baking sheet. In a bowl combine Boursin and green onions.
- Unwrap biscuits. Using your fingers, gently split biscuits horizontally. Place the biscuit bottoms on prepared baking sheet. Spread 1 Tbsp of cheese mixture over each biscuit bottom. Add biscuit tops.
- In a small bowl beat together egg yolk and water. Brush biscuits with egg yolk mixture. Sprinkle with Parmesan and additional sliced green onions. Bake 8 to 10 minutes or until golden. Serve warm.
