Coffee-Braised Pot Roast
Skillet Whole-Grain Toast
Ingredients
- 1 (3- to 3½-lb) beef chuck pot roast, trimmed of fat
- 1 tsp salt
- ½ tsp black pepper (optional)
- 1 Tbsp vegetable oil
- 1 large onion, halved and sliced
- 1 medium green sweet pepper, cut into 2-inch pieces
- 3 cloves garlic, minced
- ¾ cup beef broth
- 1 (8-oz) can crushed pineapple (juice pack), undrained
- 1 Tbsp instant espresso or French roast coffee powder
- ¼ tsp crushed red pepper
- ¼ tsp ground allspice
- 2 lb sweet potatoes, peeled, halved lengthwise, and cut into 2-inch pieces
Instructions
- Preheat oven to 325°F. Sprinkle meat with salt and, if desired, pepper. In a 6-quart Dutch oven heat oil over medium-high. Add meat; cook until browned on all sides. Remove meat. Add onion, sweet pepper, and garlic to Dutch oven; cook and stir 4 to 5 minutes or until onion and garlic start to brown.
- Return meat to Dutch oven. Add next five ingredients (through allspice). Bring to boiling. Cover pot and transfer to oven; roast 1¾ hours. Add sweet potatoes; roast, covered, 45 minutes more or until meat is tender.
- Transfer meat and vegetables to a platter; cover to keep warm. For sauce, bring liquid in Dutch oven to boiling; reduce heat. Simmer, uncovered,10 to 15 minutes or until slightly thickened. Serve meat and vegetables with sauce. Sprinkle with additional crushed red pepper, if desired.
Side Dish Ingredients
- 8 thick slices whole-grain country bread
- 4 Tbsp olive oil
- 1 large clove garlic, halved
- Flaky sea salt
Side Dish Instructions
- Brush both sides of the bread slices with olive oil. Heat a large griddle or skillet over medium. Place bread on griddle.
- Cook 2 to 4 minutes or until toasted on both sides, turning once. Cool slightly. Rub one side of each slice with a cut side of the garlic. Sprinkle with salt.
