Pineapple Pesto Chicken Wraps
Creamy Tomato Soup
Ingredients
- 2 (8- to 10-oz) skinless, boneless chicken breast halves, halved crosswise
- 1 Tbsp dried Italian seasoning, crushed
- ¼ tsp salt
- ¼ tsp black pepper
- Nonstick cooking spray
- 2 Tbsp vegetable oil
- 1 cup packed spinach leaves
- 1 cup drained juice-pack pineapple chunks
- 2 Tbsp shredded Parmesan cheese
- 2 cloves garlic, minced
- 8 (6½-inch) low-carb whole wheat flour tortillas, warmed
Instructions
- Sprinkle chicken on both sides with Italian seasoning, salt, and pepper. Coat a large nonstick skillet with cooking spray. Heat 2 teaspoons of oil in skillet over medium-high.
- Cook chicken in hot oil 6 minutes per side or until browned. Reduce heat; cover and cook 10 to 12 minutes or until done (165°F), turning once. Slice or coarsely chop chicken.
- For pesto, in food processor combine spinach, ½ cup pineapple, Parmesan, garlic, and remaining 4 teaspoons oil. Cover; process until finely chopped. Coarsely chop remaining ½ cup pineapple. Spread pesto on tortillas. Top with chicken and pineapple; roll up.
Side Dish Ingredients
- 2 (14.5-oz) cans whole tomatoes
- 2 medium red sweet peppers, seeded and coarsely chopped
- ½ of a sweet onion (such as Vidalia or Maui), chopped
- 2 tsp chopped fresh thyme
- 1 cup vegetable or chicken broth
- 2 Tbsp heavy cream
- 1 Tbsp honey
Side Dish Instructions
- In a blender or food processor combine half of the tomatoes, half of the sweet peppers, half of the onion, half of the thyme; add half of the broth. Cover and blend until smooth. Transfer to a large saucepan. Repeat with the remaining tomatoes, peppers, onion, thyme, and broth.
- Cook over medium 5 to 6 minutes or until heated through. Stir in cream and honey. If desired, drizzle with oil and sprinkle with black pepper.
