Bourbon-Sauced Pork Chops
Lemon-Dill Broccolini
Ingredients
- ⅓ cup bourbon or apple juice
- 3 Tbsp reduced-sodium soy sauce
- 3 Tbsp packed brown sugar
- 2 Tbsp cider vinegar
- 2 cloves garlic, thinly sliced
- ½ tsp grated fresh ginger
- ¼ tsp black pepper
- 1 Tbsp cold water
- ½ tsp cornstarch
- 4 (1¼-inch thick) pork chops
Instructions
- Preheat gas or charcoal grill to medium. For sauce, in a small saucepan combine bourbon, soy, sugar, vinegar, garlic, ginger, and pepper. Bring to boiling; reduce heat. Simmer, uncovered, 10 minutes or until reduced to ½ cup.
- Combine water and cornstarch; stir into bourbon mixture. Cook and stir until bubbly; cook and stir 2 minutes more.
- Cover and grill chops directly over heat 14 to 16 minutes or until done (145°F), turning once halfway through grilling and brushing occasionally with sauce during the last 5 minutes.
Side Dish Ingredients
- ½ cup reduced-sodium chicken broth
- 1 tsp finely shredded lemon zest
- 1½ tsp snipped fresh dill
- Dash crushed red pepper
- Dash black pepper
- ½ lb Broccolini
- 2 Tbsp butter
- Fresh lemon slices or zest (optional)
Side Dish Instructions
- In a large skillet combine broth, zest, dill, crushed red pepper, and black pepper. Bring to boiling; reduce heat. Cover; simmer 5 minutes.
- Add Broccolini and butter to skillet. Cover and cook over medium 6 minutes or until broccolini is tender. If desired, drain. Transfer to a serving bowl. If desired, garnish with fresh lemon.
