Bourbon-Sauced Pork Chops

Ingredients

  • ⅓ cup bourbon or apple juice
  • 3 Tbsp reduced-sodium soy sauce
  • 3 Tbsp packed brown sugar
  • 2 Tbsp cider vinegar
  • 2 cloves garlic, thinly sliced
  • ½ tsp grated fresh ginger
  • ¼ tsp black pepper
  • 1 Tbsp cold water
  • ½ tsp cornstarch
  • 4 (1¼-inch thick) pork chops

Instructions

  1. Preheat gas or charcoal grill to medium. For sauce, in a small saucepan combine bourbon, soy, sugar, vinegar, garlic, ginger, and pepper. Bring to boiling; reduce heat. Simmer, uncovered, 10 minutes or until reduced to ½ cup.
  2. Combine water and cornstarch; stir into bourbon mixture. Cook and stir until bubbly; cook and stir 2 minutes more.
  3. Cover and grill chops directly over heat 14 to 16 minutes or until done (145°F), turning once halfway through grilling and brushing occasionally with sauce during the last 5 minutes.

Side Dish Ingredients

  • ½ cup reduced-sodium chicken broth
  • 1 tsp finely shredded lemon zest
  • 1½ tsp snipped fresh dill
  • Dash crushed red pepper
  • Dash black pepper
  • ½ lb Broccolini
  • 2 Tbsp butter
  • Fresh lemon slices or zest (optional)

Side Dish Instructions

  1. In a large skillet combine broth, zest, dill, crushed red pepper, and black pepper. Bring to boiling; reduce heat. Cover; simmer 5 minutes.
  2. Add Broccolini and butter to skillet. Cover and cook over medium 6 minutes or until broccolini is tender. If desired, drain. Transfer to a serving bowl. If desired, garnish with fresh lemon.
