Apple Pizza with Bacon

Ingredients

  • 4 slices applewood- or hickory-smoked bacon, coarsely chopped
  • 2 (6- to 7-oz) Gala apples, cored and sliced (2⅔ cups)
  • ½ cup dry white wine or apple juice
  • ¼ tsp dried thyme, crushed
  • ¼ tsp black pepper
  • 1 lb purchased pizza dough
  • ⅔ cup crumbled blue cheese
  • ½ cup broken walnuts, toasted
  • ¼ cup sliced green onions
  • Honey (optional)

Instructions

  1. Preheat oven to 450°F. Grease an extra-large baking sheet. In a 10-inch skillet cook bacon over medium until crisp. Drain on paper towels, reserving 2 tablespoons drippings in skillet (set aside any other drippings). Cook apples in skillet 5 minutes, stirring to scrape up browned bits.
  2. Stir in wine, thyme, and pepper. Bring to boiling; reduce heat. Simmer, uncovered, 6 to 7 minutes or until liquid is evaporated, stirring occasionally. On a lightly floured surface, roll pizza dough into a 15x11-inch rectangle. Place on baking sheet; reshape. Brush with reserved drippings or olive oil.
  3. Spread dough with apple mixture to within ½ inch of the edges; sprinkle with cheese. Bake 10 minutes. Sprinkle pizza with bacon; bake 5 to 10 minutes more or until crust and toppings are golden. Top with nuts, onions, and, if desired, additional cheese. Drizzle with honey, if desired.

  • 1½ Tbsp lemon juice or vinegar
  • 1½ Tbsp olive oil
  • 2 tsp honey
  • 6 cups fresh baby spinach
  • Salt
  • Black pepper

Side Dish Instructions

  1. In a large bowl whisk together lemon juice, oil, and honey. Add spinach; toss gently to coat. Season with salt and pepper.
