Broccoli Fruit Salad with Pecans

Ingredients

  • 1 cup purchased aioli or mayonnaise
  • 6 Tbsp chopped green onions
  • 4 (10-inch) flour tortillas
  • 2 cups shredded rotisserie chicken
  • 2 cups thinly sliced leaf lettuce
  • 8 slices bacon, crisp-cooked
  • 2 hard-boiled eggs, sliced
  • 1 avocado, halved, seeded, peeled, and sliced
  • ¾ cup quartered grape tomatoes
  • ½ cup crumbled blue cheese (2 oz)

Instructions

  1. In s bowl combine aioli or mayonnaise with green onions. Spread each tortilla with 2 Tbsp of the aioli mixture to within ½ inch of the edge.
  2. Layer bottom halves with remaining ingredients. Fold in opposite sides; roll up tortillas. Pass remaining aioli.

Side Dish Ingredients

  • 2 cups packaged ready-to-serve broccoli slaw mix
  • ⅔ cup seedless red and/or green grapes, halved
  • ½ cup chopped apple
  • 3 Tbsp bottled citrus salad dressing (such as tangerine vinaigrette)
  • 1 large orange, peeled, seeded, and sectioned
  • ⅓ cup coarsely chopped pecans or walnuts, toasted if desired

Side Dish Instructions

  1. In a large bowl combine broccoli slaw, grapes, and apple. Up to 1 hour before serving, pour salad dressing over broccoli mixture. Add orange; toss to coat.
  2. Cover and chill or serve immediately. To serve, sprinkle with nuts and toss again.
