Chicken Cobb Wraps
Broccoli Fruit Salad with PecansIngredients
- 1 cup purchased aioli or mayonnaise
- 6 Tbsp chopped green onions
- 4 (10-inch) flour tortillas
- 2 cups shredded rotisserie chicken
- 2 cups thinly sliced leaf lettuce
- 8 slices bacon, crisp-cooked
- 2 hard-boiled eggs, sliced
- 1 avocado, halved, seeded, peeled, and sliced
- ¾ cup quartered grape tomatoes
- ½ cup crumbled blue cheese (2 oz)
Instructions
- In s bowl combine aioli or mayonnaise with green onions. Spread each tortilla with 2 Tbsp of the aioli mixture to within ½ inch of the edge.
- Layer bottom halves with remaining ingredients. Fold in opposite sides; roll up tortillas. Pass remaining aioli.
Side Dish Ingredients
- 2 cups packaged ready-to-serve broccoli slaw mix
- ⅔ cup seedless red and/or green grapes, halved
- ½ cup chopped apple
- 3 Tbsp bottled citrus salad dressing (such as tangerine vinaigrette)
- 1 large orange, peeled, seeded, and sectioned
- ⅓ cup coarsely chopped pecans or walnuts, toasted if desired
Side Dish Instructions
- In a large bowl combine broccoli slaw, grapes, and apple. Up to 1 hour before serving, pour salad dressing over broccoli mixture. Add orange; toss to coat.
- Cover and chill or serve immediately. To serve, sprinkle with nuts and toss again.
