- ½ cup plain hummus
- 4 soft taco-size whole wheat tortillas
- ½ lb thin deli-sliced low-sodium roast beef
- 2 roasted red peppers, thinly sliced
- ¼ cup thinly sliced red onion
- 2 cups baby arugula
Instructions
- Spread hummus over tortillas.
- Top with roast beef, peppers, onion and arugula; roll up.
