Breakfast Burrito Bowls

Cilantro Rice

Ingredients

  • 4 large eggs
  • ¼ tsp ground cumin
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 clove garlic, minced
  • 2 tsp olive oil
  • 1 red bell pepper, chopped
  • ½ cup chopped onion
  • 1 avocado, pitted and sliced
  • ½ cup refrigerated salsa

Instructions

  1. Whisk together eggs, cumin, salt and pepper.
  2. Sauté garlic in hot oil in a large skillet over medium heat 30 seconds or until fragrant. Add bell pepper and onion; cook 6 to 8 minutes or until tender.
  3. Add eggs; cook 4 minutes or until eggs are thickened and set, stirring constantly.
  4. Divide Cilantro Rice among 4 bowls; top with egg mixture, avocado and salsa.

Side Dish Ingredients

  • 1 (8.8-oz) pkg microwavable brown rice
  • 2 Tbsp chopped fresh cilantro
  • ⅛ tsp salt

Side Dish Instructions

  1. Microwave rice according to package directions.
  2. Stir in cilantro and salt.
