Breakfast Burrito Bowls
Cilantro RiceIngredients
- 4 large eggs
- ¼ tsp ground cumin
- ¼ tsp salt
- ¼ tsp pepper
- 1 clove garlic, minced
- 2 tsp olive oil
- 1 red bell pepper, chopped
- ½ cup chopped onion
- 1 avocado, pitted and sliced
- ½ cup refrigerated salsa
Instructions
- Whisk together eggs, cumin, salt and pepper.
- Sauté garlic in hot oil in a large skillet over medium heat 30 seconds or until fragrant. Add bell pepper and onion; cook 6 to 8 minutes or until tender.
- Add eggs; cook 4 minutes or until eggs are thickened and set, stirring constantly.
- Divide Cilantro Rice among 4 bowls; top with egg mixture, avocado and salsa.

- 1 (8.8-oz) pkg microwavable brown rice
- 2 Tbsp chopped fresh cilantro
- ⅛ tsp salt
Side Dish Instructions
- Microwave rice according to package directions.
- Stir in cilantro and salt.
