Asian Chicken and "Noodle" Salad in a Jar

Ingredients

  • 2 large zucchini
  • 1 avocado, pitted and diced
  • 1 Tbsp fresh lime juice
  • 1 carrot, grated
  • ½ cup shredded red cabbage
  • 2½ cups shredded rotisserie chicken (without skin)
  • ¼ cup chopped fresh cilantro
  • ¼ cup roasted sunflower kernels

Instructions

  1. Cut zucchini into long, thin strands using a spiralizer.
  2. Toss avocado with lime juice.
  3. Pour Orange-Sesame Vinaigrette into 4 widemouthed quart-size Mason jars. Top with zucchini noodles, carrot, avocado, cabbage, chicken, cilantro and sunflower seeds.
  4. Top with lids; seal jars. Chill until ready to serve.
  5. Before serving, shake jars well. Eat from jars, or pour into bowls.

Side Dish Ingredients

  • 2 Tbsp fresh orange juice
  • 2 Tbsp rice vinegar
  • 2 Tbsp olive oil
  • 2 tsp sesame oil
  • 2 tsp fresh lime juice
  • 2 tsp minced ginger
  • 1 tsp honey
  • ¼ tsp kosher salt

Side Dish Instructions

  1. Whisk together all ingredients until blended.
