Lemon-Strawberry Smoothie Bowls

Ingredients

  • ½ cup chopped raw walnuts
  • 1 (16-oz) pkg strawberries, hulled
  • 1 (13.5-oz) can unsweetened coconut milk, divided
  • 1 tsp lemon zest
  • ⅓ cup fresh lemon juice
  • ¼ cup raw honey
  • 1½ cups crushed ice
  • 2 bananas, sliced
  • 1 (4.4-oz) pkg blueberries
  • 2 Tbsp chia seeds

Instructions

  1. Toast nuts in a nonstick skillet over medium-high heat 4 to 6 minutes or until fragrant.
  2. Process strawberries, ¾ cup coconut milk, lemon zest, lemon juice, honey, and ice in a blender until smooth, scraping sides as needed.
  3. Pour into 4 bowls; top with banana slices, blueberries, nuts, and chia seeds. Drizzle with remaining coconut milk.
