Huevos Rancheros

Ingredients
- 1 small green bell pepper, finely chopped
- 1 clove garlic, minced
- 3 Tbsp avocado oil, divided
- 2 tomatoes, chopped
- 2 Tbsp chopped green onion
- 1 Tbsp fresh lime juice
- 8 large eggs
- 2 avocados, sliced
Instructions
- Cook bell pepper and garlic in 1 Tbsp hot oil in a large nonstick skillet over medium heat 3 to 4 minutes or until bell pepper is crisp-tender. Season lightly with salt and pepper. Add tomatoes; cook 1 minute or until thoroughly heated.
- Transfer salsa to a bowl; stir in onion and lime juice. Set aside.
- Wipe skillet clean. Heat 1 Tbsp oil in skillet over medium heat. Crack 4 eggs into skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness; sprinkle with desired amount of salt and pepper. Repeat procedure with 1 Tbsp oil and 4 eggs.
- Divide avocado among 4 plates; top with fried eggs and salsa.
