Spicy Roasted Carrots

Ingredients

  • ¾ lb flank steak (or use top sirloin), trimmed
  • 2 cloves garlic, minced
  • ¼ cup fresh orange juice
  • 2 Tbsp fresh lemon juice
  • 3 Tbsp coconut aminos
  • 1 bunch fresh cilantro, chopped
  • ½ Tbsp chili powder
  • ½ Tbsp ground cumin
  • 2 Tbsp avocado oil
  • 1 avocado, sliced
  • 1 cup fresh salsa

Instructions

  1. Place steak in a large zip-top plastic freezer bag.
  2. Whisk together garlic and next 7 ingredients; reserve ¼ cup marinade. Pour remaining marinade over steak; seal and chill 8 hours or overnight.
  3. Remove steak from marinade. Heat a greased cast-iron skillet or grill pan over medium-high heat; add steak. Cook 6 minutes per side or to desired doneness; let steak stand 10 minutes before thinly slicing across the grain.
  4. Serve with reserved ¼ cup marinade, avocado, and salsa.

Side Dish Ingredients

  • ¾ lb carrots, cut into 1-inch pieces
  • 1 Tbsp avocado oil
  • ½ tsp ground cumin
  • ½ tsp chili powder
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Combine carrots, oil, cumin, chili powder, salt, and pepper on a rimmed baking sheet; toss.
  2. Bake 25 minutes or until tender and browned, stirring once.
