Spicy Roasted Carrots
Ingredients
- ¾ lb flank steak (or use top sirloin), trimmed
- 2 cloves garlic, minced
- ¼ cup fresh orange juice
- 2 Tbsp fresh lemon juice
- 3 Tbsp coconut aminos
- 1 bunch fresh cilantro, chopped
- ½ Tbsp chili powder
- ½ Tbsp ground cumin
- 2 Tbsp avocado oil
- 1 avocado, sliced
- 1 cup fresh salsa
Instructions
- Place steak in a large zip-top plastic freezer bag.
- Whisk together garlic and next 7 ingredients; reserve ¼ cup marinade. Pour remaining marinade over steak; seal and chill 8 hours or overnight.
- Remove steak from marinade. Heat a greased cast-iron skillet or grill pan over medium-high heat; add steak. Cook 6 minutes per side or to desired doneness; let steak stand 10 minutes before thinly slicing across the grain.
- Serve with reserved ¼ cup marinade, avocado, and salsa.

- ¾ lb carrots, cut into 1-inch pieces
- 1 Tbsp avocado oil
- ½ tsp ground cumin
- ½ tsp chili powder
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Combine carrots, oil, cumin, chili powder, salt, and pepper on a rimmed baking sheet; toss.
- Bake 25 minutes or until tender and browned, stirring once.
