Barbecue Chicken Flatbreads

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 2 Tbsp butter
  • 6 burrito-size flour tortillas
  • 1 Tbsp olive oil
  • 1 (15-oz) can black beans, drained and rinsed
  • ½ red onion, thinly sliced
  • 1 (8-oz) pkg shredded Monterey Jack cheese
  • 1 cup barbecue sauce
  • 1 cup Ranch dressing
  • ¼ cup fresh cilantro leaves

Instructions

  1. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
  2. Melt butter in a large nonstick skillet over medium heat; add chicken, and cook 5 to 6 minutes per side or until done. Let stand 5 minutes; thinly slice.
  3. Meanwhile, preheat oven to 400°F. Arrange tortillas on baking sheets; brush with oil, and bake 5 minutes. Divide beans, chicken, and onion among tortillas; sprinkle with cheese. Bake 10 minutes or until cheese is melted and tortillas are crisp.
  4. Drizzle barbecue sauce and Ranch dressing over tortillas. Sprinkle with cilantro.
