Barbecue Chicken Flatbreads
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 2 Tbsp butter
- 6 burrito-size flour tortillas
- 1 Tbsp olive oil
- 1 (15-oz) can black beans, drained and rinsed
- ½ red onion, thinly sliced
- 1 (8-oz) pkg shredded Monterey Jack cheese
- 1 cup barbecue sauce
- 1 cup Ranch dressing
- ¼ cup fresh cilantro leaves
Instructions
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
- Melt butter in a large nonstick skillet over medium heat; add chicken, and cook 5 to 6 minutes per side or until done. Let stand 5 minutes; thinly slice.
- Meanwhile, preheat oven to 400°F. Arrange tortillas on baking sheets; brush with oil, and bake 5 minutes. Divide beans, chicken, and onion among tortillas; sprinkle with cheese. Bake 10 minutes or until cheese is melted and tortillas are crisp.
- Drizzle barbecue sauce and Ranch dressing over tortillas. Sprinkle with cilantro.
