Skillet Chicken and Stuffing

Ingredients

  • 1 (6-oz) pkg cornbread stuffing mix
  • 3 Tbsp butter
  • 2 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup chopped onion
  • 1 Tbsp all-purpose flour
  • 1 (10.75-oz) can cream of mushroom soup
  • ⅔ cup milk
  • 1 (16-oz) pkg frozen cut green beans
  • 1 cup shredded Cheddar cheese

Instructions

  1. Cook stuffing mix according to package directions.
  2. Meanwhile, melt butter in a large skillet over medium heat. Season chicken lightly with salt and pepper; add to skillet along with onion, and cook, stirring occasionally, until chicken is done. Add flour, and cook, stirring, 2 minutes.
  3. Stir in soup, milk, and green beans; sprinkle with stuffing. Cover and cook 10 minutes. Sprinkle with cheese, and let stand until cheese is melted.

Side Dish Ingredients

  • 2 Tbsp butter
  • 4 cloves garlic, minced
  • 1 bunch broccoli, cut into small florets

Side Dish Instructions

  1. Melt butter in a large skillet over medium-high heat. Add garlic, and sauté 1 minute.
  2. Add broccoli; cook 6 to 7 minutes or until tender. Season with salt and pepper to taste.
