Cheesy Stroganoff Tortellini

Ingredients

  • 1 (19-oz) pkg frozen cheese tortellini
  • 1 lb ground beef
  • 1 cup chopped onion
  • 1 (8-oz) pkg whole mushrooms, sliced
  • 3 cloves garlic, minced
  • 3 Tbsp all-purpose flour
  • 1 (14.5-oz) can beef broth
  • 1 (8-oz) carton sour cream
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Cook tortellini according to package directions; drain and keep warm.
  2. Meanwhile, cook beef, onion, mushrooms, and garlic in a large, deep skillet over medium-high heat until beef is browned and crumbly; drain and return to skillet.
  3. Add flour; cook, stirring constantly, 2 minutes. Gradually stir in broth, and cook until mixture is thickened. Stir in sour cream and tortellini; sprinkle with cheese.
  4. Cover and cook 2 minutes or until cheese is melted.

  • 1 lb green beans, trimmed
  • 2 cloves garlic, minced
  • 3 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together all ingredients on a rimmed baking sheet. Bake 10 minutes or until browned and tender.
