Korean Mini Meat Loaves
Roasted Sesame Broccoli Spears
Ingredients
- ¾ lb lean ground beef
- 1 large egg, lightly beaten
- ¾ cup panko breadcrumbs (preferably whole wheat)
- 2 Tbsp low-sodium soy sauce, divided
- 1 Tbsp minced garlic
- ½ Tbsp ginger paste
- ¼ tsp pepper
- 1 Tbsp honey
- ½ Tbsp gochujang (Korean chile paste)
Instructions
- Preheat oven to 450°F. Gently combine beef, egg, panko, 1 Tbsp soy sauce, garlic, ginger paste, and pepper using your hands. Shape mixture into 3 small loaves. Place on a wire rack on a foil-lined rimmed baking sheet.
- Whisk together 1 Tbsp soy sauce, honey, and gochujang; brush over loaves.
- Bake 20 minutes or until no longer pink in centers.
Side Dish Ingredients
- 1 head broccoli, cut into spears
- 1 Tbsp sesame oil
- ½ Tbsp minced garlic
- ½ Tbsp sesame seeds
- ¼ tsp kosher salt
- ⅛ tsp crushed red pepper
Side Dish Instructions
- Preheat oven to 450°F. Combine all ingredients on a rimmed baking sheet; spread in a single layer. Bake 14 minutes or until well browned, stirring once during last 2 minutes of baking.
